Stir frying food is easy, but to get it right, you need to apply a few simple
rules. First, if you’re having rices as
well, you should get that before you start cooking stir fry. Second, all your ingredients need to get
prepared before you throw them on a stir line.
And third, the pan needs to be hot, really hot so you have to move
fast. So, are you ready to master stir
fry? At the end of this video, there
will be a list of equipment and ingredients that you need to make this dish.
Let’s start with preparing the
fresh vegetables. Set each ingredient aside separately. Cut the top off the stem of one small head of
broccoli then peon cut the stuffs on the diagonal into one quarter (1/4) inch
thick slices. Cut one read pepper in a
half and remove stem and seeds, then cut in one inch squares. Cut four green
onions in half length wise, then cut them on diagonal into 2-inch pieces. Peel
and mince three cloths of garlic. Peel
and mince one table spoon of ginger. Cut
the chicken into bite size pieces.
Now for the sauce. Lane together with a whisker or a fork. One quarter cup of chicken stock, saving the
remaining one quarter cup for later, two table spoons of soy sauce, one table
spoon of cornstarch, one table spoon of oyster sauce, one tea spoon of sesame
seed oil and one quart tea spoon of the chili paste. Set the sauce aside.
Heat a wok or deep fry pan with
high heat until a few drops of water sprinkled on surface sizzles into steam. Pour
in two table spoons of oil and swirl the pan to evenly coat in the pan; heat the
pan for 30 seconds. Add half the chicken breasts, stir-fry by lifting and
tossing chicken for 3 to 4 minutes or until it’s no longer pink inside. Remove
the chicken to a plate. Repeat with the remaining chicken, add more oil if
necessary. Transfer the chicken to a plate.
Add remaining one table spoon of oil to the pan. Add garlic and ginger and stir-fry for 10 seconds or until fragrant. Add broccoli and red pepper and stir-fry for 1 minute. Add onions and stir-fry for 30 seconds. Pour in remaining 1/4 cup stock. Cover the pan and steam the vegetables for 2 minutes or until the broccoli is tender and crisp, stirring once. Return the chicken to the pan. Push everything to side and pour the soy sauce mixture into the center of the pan. Cook the sauce, stirring, for about 1 or 2 minutes or until its thickened. Stir vegetables and chicken into sauce until everything is glazed and coated. Serve the Stir-fry immediately, but don’t forget to sprinkles with some cashew nuts. Enjoy!
For the ingredients you will need: broccoli, red pepper, green onions, chicken stock, boneless, skinless chicken breasts, soy sauce, cornstarch, oyster sauce, sesame oil, vegetable oil, chili paste or hot sauce, garlic, ginger, and Cashew nuts.

knife, parrying knife, measuring spoons, measuring cup, large fry pan, and a
spatular.
